Palatable dried veggies?

          I think I'm going to buy a dehydrator today and am planning on using it mainly for berries and jerky, but can anyone think of any vegetables that would be palatable in dried form? They either don't exist or I'm really stooped (EDIT: What the hell is stooped? stumped).
