Has anyone else ever heard of this? Supposedly, it is a spiritual practice but also manipulates the connective tissue in order to "realign" the body.

Rolfing is one of the earliest forms of soft-tissue manipulation. It's very similar to ART and other soft-tissue work in it's goals and practices. Rolfing tends to be one of the more painful options.

Do you feel as though one method of soft-tissue would be more beneficial for an IT-Band type injury. A couple of our athletes are having problems and they are in need of something different because physical therapy and other methods have failed to work.

The more you learn about all of the various soft tissue therapies the more it becomes apparent that they all have very similar objectives with slightly different techniques. For IT band work I've found using foam rollers to be almost as effective as other more therapies requiring greater skill levels.

We have doing both foam rollers and deep tissue work as of right now.
So your saying that a atteding a rolfing session won't have any significant affect on the athletes since they are currently undergoing similar treatment?

My comment was specifically for the treatment of IT band problems. In cases where the IT band is a symptom of larger issues Rolfing or other manual methods performed by a trained therapist would likely be more thorough and beneficial.
